2 cans of Chickpeas
1 Red Onion Diced
4 springs of Green Onion Chopped
1 Cup chopped Parsley
5 ounces of Feta Cheese
Red hot pepper flakes
Salt and Pepper
- Drizzle Olive oil into a non-stick pan. Over low heat cook the red onion until golden. Add in a pinch of the red pepper flakes. Remove from heat and set aside until it is completely cooled.
- Rinse Chickpeas and drain into a salad bowl. Add the Green onion, chopped Parsley, Crumbled Feta, and the juice of 1 lemon. Season with Salt and Pepper.
- When onions are completely cooled add to the salad and mix well.
