Recipe: Balsamic Berry Grilled Cheese

Ingredients:

French Bread

1 Cup Blueberries

1 Cup Strawberries

1 1/2 Tbs Sugar

1 Tbs Balsamic Vinegar

1 Bunch Spinach

1 Cup Shredded Vegan Mozzarella

1 Tsp Vegan Butter

Directions:

Preheat oven to 450 degrees Fahrenheit.  Place parchment paper on a baking sheet.

Place Blueberries, Strawberries, Balsamic and Sugar into a Sauce pan. Over medium high heat stir together and bring to a boil.

Remove from heat and strain the berries from the extra liquid.

Spread One side of each slice of bread with butter. (Buttered side is the outside of sandwich) On other side place cheese, berries, spinach and then cheese again.

Cook in the oven until bottom is golden brown, flip and continue cooking until other side is golden.

*Side note: Neurotic Mommy suggested using the left over liquid from the berries as a salad dressing. My mom tried it and said “It was so good!”*

Recipe: Lavender Scones

Ingredients:

2 1/2 Cups Flour

1 1/2 tsp Chapped lavender

Salt

1/2 tsp Baking Soda

1/3 Cup Oil

1/4 Cup Honey/ Maple Syrup

Directions:

Preheat oven to 350 degrees Fahrenheit.

In a large bowl mix all dry ingredients together. In a separate bowl mix wet ingredients. Once mixed add wet ingredients to the dry ingredients.

scoop dough onto a prepared baking sheet. Baked for 15 to 18 minutes or until lightly browned.
